Hey guys!
So I know these pictures suck when it comes to the quality of them. I thought I charged my camera last night, alas, I did not. So I took these with my stupid crackberry which sucks so much. But you get the idea. GUYS! These recipes turned out friggen fantastic. My Mom and my friend had no idea that these were healthier for you than the originals.
Let’s talk Pumpkin Cookies. My Mother used the world “orgasmic!” She was obsessed with these little suckers. They are far more cake like than the average cookie, which I absolutely loved. They’re light and airy and fantastic. I cannot believe they are only 48 calories a cookie. I obviously had two (Today was not a good diet day for me, in case anyone wants to know ahead of time haha). But anyways, the recipe made 24 delightful little treats and they were fantastic. I highly recommend you guys try the recipe before fall/winter is over and you get sick of pumpkin. As if that’s even possible, let’s be real here.
Next up, the Pumpkin Pie Cupcakes. Say what now?! These cupcakes actually tasted like pumpkin pie without the crust. My Mom and I couldn’t believe it. They were amazing. The center caves in a bit, which is awesome because you can put a dollup of truwhip in that bad boy sprinkle a little with cinnamon, and have a heavenly treat for only 100 calories. I am in love ladies and gentlemen and I highly recommend that recipe as well. They are sooo amazing and gooey.
THE STUFFING! HOLY S#%&T BALLS GUYS! This recipe has been my favorite for two years now since I found it. My family requested that it be made again this year. IT IS FANTASTIC! I was eating it out of the pan when I took it out of the oven. Literally this is the best stuffing I have ever had. I’m sure there are better stuffings, but ones that are this healthy and delicious are hard to come by. And if you haven’t tried this recipe I urge you to try it even if it’s not on Thanksgiving. You won’t regret it, it’s that good.
Lastly, the lightened up Green Bean Casserole. So I love GBC. Sooo much. I’m not sure how this one stood in comparison. I didn’t buy sour cream and instead used greek yogurt cause I didn’t realize the recipe needed sour cream and plain greek yogurt can substitute that no problemo. Buttt, it was pretty good with the stuffing bits on top. I do like it, but the original definitely has more flavor. However, I cut some serious effing calories out of that casserole and let me tell you this now the original is not worth the amount of calories it contains. It’s like satan in a pan, only a delicious satan.
